This proximity provides a unique microclimate characterized by cool ocean breezes, enveloping coastal fog, and fertile soils from ancient seabeds. The Oceano Zero Chardonnay undergoes a meticulous production process to enhance its flavor profile. The wine is barrel-fermented in French oak and undergoes 50% malolactic fermentation, enriching it with creamy textures and complexity. Further depth is added as the wine ages on lees in oak barrels… With weekly stirring to increase contact with the yeast, enriching the wine’s body and flavor.

To cater to health-conscious consumers and those avoiding alcohol, the wine undergoes alcohol removal using the Spinning Cone Column method. Resulting in a final alcohol content of only 0.29% by volume. Despite this reduction, the wine retains the rich flavors and aromas characteristic of traditional Chardonnay.

A limited production run of 2,400 bottles ensures each batch of Oceano Zero Chardonnay is a testament to the meticulous care and innovative practices at Spanish Springs Vineyard. Rachel Martin has been growing grapes and producing wine for over 20 years. After fast-tracking her wine education at the University of Bordeaux’s prestigious Wine Sensory Diploma Program and Napa Valley College’s School of Enology and Viticulture, she grew her family winery, Boxwood Estate, which has moved from being a purely local presence to an internationally distributed brand. During her tenure, she authored the 2012 successful TTB petition, establishing Middleburg Virginia, as the state’s seventh AVA.

In 2016, she co-founded her boutique winery, Oceano Wines. Oceano’s award-winning Chardonnay and Pinot Noir are sourced from SIP Certified (Sustainability in Practice) Spanish Springs Vineyard, the closest vineyard to the ocean in the San Luis Obispo Coast AVA, not to mention the Golden State itself. In October 2023, Rachel launched her first ultra-premium non-alcoholic wine label, Oceano Zero. Oceano Zero’s first vintage, its’ 2022 Pinot Noir, sold out in record time, embodying the cultural shift towards no and low alternatives and signaling a new era in luxury wine has begun.

Rachel is a member of Les Dames d’Escoffier, New York, and Washington, D.C. Chapters and was the first woman to be inducted into the Washington, D.C. Chapter of the International Society of Wine & Food. She and her wines have been featured in The Washington Post, The San Francisco Examiner, Forbes, Food & Wine, and Edible, among many others.
